international des Sciences et Technologies des viandes, qui s&rsquo;est achev\u00e9 vendredi \u00e0 Clermont-Ferrand (Puy-de-D\u00f4me).<\/span><\/span><\/span><\/h2>\n<p><span style=\"color: #000000;\"><span style=\"font-weight: 400;\"><a href=\"https:\/\/i0.wp.com\/www.grandesterresbio.com\/wp-content\/uploads\/2015\/09\/800px-Revest_du_Bion_-_Troupeau_Moutons.jpg\"><img \/><\/a><strong>\u00ab\u00a0La tendance attendue est une augmentation de la consommation mondiale de viande de 1,6% par an lors des dix prochaines ann\u00e9es\u00a0\u00bb<\/strong>, a indiqu\u00e9 lors d&rsquo;une conf\u00e9rence l&rsquo;agro\u00e9conomiste belge <strong>Erik Mathijs,<\/strong> citant des chiffres r\u00e9cents de l&rsquo;Organisation des nations unies pour l&rsquo;alimentation et l&rsquo;agriculture (FAO).<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><strong>En cinquante ans, la consommation de produits carn\u00e9s (viande fra\u00eeche, charcuterie, plats surgel\u00e9s, conserves) a presque doubl\u00e9 dans le monde<\/strong>, passant de <strong>23,1 kilos par personne et par an en 1961, \u00e0 42,2 kilos en 2011.<\/strong> <\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><\/span><\/p>\n<p><span style=\"color: #000000;\"><span style=\"font-weight: 400;\">\u00ab\u00a0Au cours des 20 derni\u00e8res ann\u00e9es, les pays \u00e9mergents ont connu une r\u00e9volution de l&rsquo;\u00e9levage qui a conduit \u00e0 une hausse de la consommation en viande, <strong>en particulier de porc et de volaille<\/strong>\u00ab\u00a0, a expliqu\u00e9 <strong>Pierre Sans<\/strong>, chercheur associ\u00e9 \u00e0 l&rsquo;Inra Aliss (Alimentation et Sciences sociales) d&rsquo;Ivry-sur-Seine.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><\/span><\/p>\n<p><span style=\"color: #000000;\"><span style=\"font-weight: 400;\">Dans les prochaines ann\u00e9es, les pays \u00e9mergents devraient continuer de tirer vers le haut <strong>une consommation mondiale, qui s&rsquo;est tass\u00e9e dans les pays les plus d\u00e9velopp\u00e9s (Europe de l&rsquo;Ouest, Am\u00e9rique du Nord, Japon).<\/strong><\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><strong>\u00ab\u00a0Par exemple, en France, on est pass\u00e9 de 97 kilos de viande par habitant et par an \u00e0 la fin des ann\u00e9es 90 \u00e0 87 kilos en 2014<\/strong>\u00ab\u00a0, a ajout\u00e9 \u00e0 l&rsquo;AFP cet enseignant \u00e0 l&rsquo;\u00c9cole nationale v\u00e9t\u00e9rinaire de Toulouse.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Les principales raisons: <strong>\u00ab\u00a0le prix unitaire \u00e9lev\u00e9 de la viande\u00a0\u00bb dans un contexte de crise \u00e9conomique et la \u00ab\u00a0prise de conscience des consommateurs\u00a0\u00bb<\/strong> en mati\u00e8re de bien-\u00eatre animal et de nutrition notamment. <\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Autre incertitude: le changement climatique, dont l&rsquo;un des premiers responsables est l&rsquo;\u00e9levage, rappelle Erik Mathijs, qui enseigne \u00e0 l&rsquo;Universit\u00e9 catholique n\u00e9erlandophone de Louvain.\u00a0<\/span><span style=\"font-weight: 400;\"><strong>\u00ab\u00a0Les n\u00e9gociations (visant \u00e0 un accord pour lutter contre le changement climatique) porteront n\u00e9cessairement sur la r\u00e9duction de la production et de la consommation de viande\u00a0\u00bb<\/strong>, a-t-il pr\u00e9dit. <\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><\/span><\/p>\n<p><span style=\"color: #000000;\"><span style=\"font-weight: 400;\">Environ 500 scientifiques et professionnels de la viande \u00e9taient r\u00e9unis dans la capitale auvergnate pour partager leurs connaissances en mati\u00e8re de prospectives et d&rsquo;environnement, de production et de technologies, de nutrition et de sant\u00e9. <\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><\/span><\/p>\n<p><span style=\"color: #000000;\"><span style=\"font-weight: 400;\">Le congr\u00e8s, qui se tient chaque ann\u00e9e dans un pays diff\u00e9rent, n&rsquo;avait pas \u00e9t\u00e9 organis\u00e9 en France depuis 23 ans.
