Si les limites de ce groupe, r\u00e9duit, sont encore poreuses, on s\u2019entend g\u00e9n\u00e9ralement sur le fait que <strong>les \u00e9pices sont issues de plantes<\/strong> (ce qui exclut le sel), qu\u2019elles poss\u00e8dent des saveurs fortes, piquantes ou troublantes, qu\u2019elles colorent parfois, et qu\u2019<strong>elles subissent une pr\u00e9paration apr\u00e8s la cueillette, ce qui les distingue des fines herbes.<\/strong><\/span><\/p>\n<p><span style=\"font-weight: 400;\">Par ailleurs, les \u00e9pices ne se mangent pas telles quelles<\/span><b> :<\/b><span style=\"font-weight: 400;\">\u00a0<\/span><span style=\"font-weight: 400;\"><strong>elles participent \u00e0 l\u2019\u00e9laboration du mets, ce qui les diff\u00e9rencie des condiments, servis \u00e0 part.<\/strong> Ainsi la moutarde de table est un condiment, mais la graine de moutarde une \u00e9pice. La moutarde est famili\u00e8re dans nos contr\u00e9es. Pourtant les \u00e9pices n\u2019englobent pas toutes les plantes qui parfument notre cuisine au quotidien, comme l\u2019ail<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><span style=\"font-weight: 400;\">ou l\u2019oignon. Elles suscitent plut\u00f4t des r\u00eaveries tropicales et des visions d\u2019opulence. Les \u00e9pices embaument les longues caravanes, parcourant la Route de la soie \u00e0 travers les d\u00e9serts et les montagnes d\u2019Arabie et d\u2019Asie.
