Disposez pour cela ses tubercules dans des pots \u00e0 l\u2019abri du froid, sous ch\u00e2ssis. Lorsque vos pieds atteindront 10 \u00e0 15 cm, il vous sera possible de les transplanter \u00e0 l\u2019ext\u00e9rieur, \u00e0 20 cm de profondeur et en les espa\u00e7ant de 25 cm. Pelez, mixez, ajoutez le lait dont les proportions varieront selon vos go\u00fbts (pur\u00e9e \u00e9paisse ou plus fluide). Incorporez le jaune d&rsquo;\u0153uf. Salez, poivrez, r\u00e2pez un peu de muscade. Remettez sur le feu quelques instants pour r\u00e9chauffer et faire fondre le beurre.
